Considering the last poll that was taken, there was an overwhelming response for recipes in the crockpot and low-calorie casseroles (could there be such a thing, as low-calorie casseroles?) Anyhoo, I delegated the first recipe to be a tried and true from the farmstead kitchen. I try to make shredded chicken as often as possible, for the simple fact that; I can freeze it, is extremely versatile in numerous recipes, very inexpensive, and you can fix it and forget.
All you need to play the game is: A package of chicken breasts, 1.5 cups of chicken broth or water, bay leaves (optional), salt & pepper. THAT'S IT!
Place chicken in the crockpot with remaining ingredients, set temperature to low and go fix fence for afew hours (6-7 hours or until pulls apart easily). Piece of Cake. I can't stress how easy and universal shredded chicken really is, not to mention, CHEAP. Here are some examples of shredded chicken, HERE, HERE, HERE, HERE, and HERE, just to name a few.
Once the meat is done, I place it on a sheet pan, grab 2 forks and begin to dissect (excuse me, that is the probably an inappropriate word) the bird. Shred, all of the delicious breast meat. If you are going to freeze any, be sure to put some broth in the freezer storage bag, you will enjoy juicy meat, not dried out, trust me.
