Only a temporary loss of finger movement due to scolding hot H2O, while attempting to peel tomato's. Certain sacrifices have to be made for a quality product.
It's time to invade your garden! All of those vegetables that you planted last spring, should be in prime form.
12 Jalapeno Peppers
2-3 Banana Peppers (Hot or Mild)
12 Large Ripe Tomato's
4 Large Green Tomato's
3 Large Onions
4 Green Sweet Peppers
6 Garlic Cloves
Sprigs of Cilantro
Chop all of these ingredients in the food processor (in numerous batches). All of these ingredients are subject to change as per your liking.
Begin combining all other non-garden related ingredients.
2 Cups White Vinegar
1 tsp Black Pepper
3-6 TBS Brown Sugar
1 Tbsp Salt
1 or 2 12 oz cans tomato paste or puree
small amount of lemon juice
Place all ingredients in a enormous pot, and bring to a boil for 30-45 minutes or 60 for a thicker sauce. You will need a huge, gigantic, catastrophic in size, pot!
It is ok to periodically taste the concoction while it is boiling down, too make sure your taste buds approve. If it is too hot for your liking you can add mashed up beans (garbanzo, pinto or kidney), if you like a sweeter salsa, add more sugar. Don't forget to properly season with salt and pepper, I tripled the desired amount. Preggo woman can be naughty like that.
We sterilized our canning jars three times(HH is a germafob, he fears dying of botulism). We first cleaned all of the Mason jars in the dishes washer, next transferring them to the scolding hot water in the sink, and then finally placing them into a water bath on the stove (boiling jars/thin lids upside down for about 5 minutes, we did not have jar rack so we did it the old fashioned way). No contamination here.
The FB's (Farm Boy's) crave salsa, like a vertically challenged woman needs a solid pair of stiletto's in her wardrobe. Yes, I am speaking from experience.

Program Note: We doubled this batch, making 24 pint sized jars.
Program Note 2: We ate our second jar of salsa last night, I don't think it is going to last till September. Next year we may quadruple this batch, then it might last until Christmas.
